Herb Crust Preparation

    Prepare Herb Mixture

    In a medium bowl, combine the chopped parsley, chopped basil, minced garlic, grated Parmesan cheese, olive oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Chilean Sea Bass Preparation

    Prepare Sea Bass

    Preheat the oven to 400°F (200°C). Place the Chilean sea bass fillets on a baking sheet lined with parchment paper. Drizzle the lemon juice over the fillets and then spread the herb mixture evenly on top of each fillet.

    Bake the Fish

    Bake the sea bass in the preheated oven for 15-20 minutes, or until the fish is cooked through and the herb crust is golden brown.

Grilled Swiss Chard Preparation

    Sauté Swiss Chard

    While the sea bass is baking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for about 1 minute until fragrant. Add the chopped Swiss chard, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the chard is wilted and tender.

Roasted Sweet Peppers Preparation

    Roast Peppers

    In another baking dish, toss the sliced sweet peppers with 1 tablespoon of olive oil, salt, and black pepper. Roast them in the oven alongside the sea bass for the last 10 minutes of cooking time, or until they are tender and slightly charred.

Serving

    Plate the Dish

    Once the sea bass is done baking, remove it from the oven. Serve the herb crusted Chilean sea bass with sautéed Swiss chard and roasted sweet peppers on the side. Enjoy your meal!
