    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Pour in the activated yeast mixture and melted unsalted butter. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for 1 hour.

    Shape Pretzel Bites

    After the dough has risen, punch it down and divide it into small balls (about 1 inch in size). Roll each ball into a rope and twist into pretzel shapes or keep them as bites.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil. Carefully add the pretzel bites to the boiling water for about 30 seconds and then remove them using a slotted spoon.

    Bake Pretzel Bites

    Arrange the pretzel bites on a baking sheet lined with parchment paper. Brush with melted butter and sprinkle with coarse sea salt and smoked paprika. Bake in a preheated oven at 425°F (220°C) for about 12-15 minutes or until golden brown.

Cheddar Fondue

    Prepare Cheese

    In a medium saucepan over low heat, combine the aged cheddar cheese and cream cheese. Stir occasionally until melted and smooth.

    Stir in the minced garlic and beer. Continue to cook on low heat, stirring until well combined. Season with freshly ground black pepper and grated nutmeg to taste.

    Once the cheese mixture is smooth and creamy, pour it into a fondue pot or a serving bowl. Serve warm alongside the grilled pretzel bites.
