Preparing the Marinade

Make the Marinade

In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.

Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the salmon is well coated. Cover and refrigerate for at least 30 minutes.

Chop the Vegetables

While the salmon is marinating, chop the zucchini and bell pepper into bite-sized pieces. Trim the ends of the asparagus.

Season the Vegetables

In a bowl, toss the chopped zucchini, bell pepper, and asparagus with 1 tablespoon of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper until evenly coated.

Grilling

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Salmon

Remove the salmon from the marinade and place it on the grill skin-side down. Grill for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork.

Grill the Vegetables

While the salmon is grilling, place the seasoned vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

Plate the Dish

Once cooked, remove the salmon and vegetables from the grill. Serve the grilled salmon with the seasonal vegetables on the side. Optionally, drizzle with additional lemon juice before serving.
