Method

Focaccia Bread

  1. 1

    Prepare the Dough

In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  3. 3

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

  4. 4

    Prepare Garlic and Rosemary

Preheat your oven to 400°F (200°C). Peel and crush the garlic cloves. Mix with chopped fresh rosemary.

  5. 5

    Shape the Focaccia

Once the dough has risen, punch it down and transfer it to a greased baking sheet. Stretch it out to fit the pan, making dimples with your fingers.

  6. 6

    Add Toppings

Drizzle olive oil over the top, sprinkle with the garlic and rosemary mixture, and let it rest for another 20 minutes.

  7. 7

    Bake

Bake the focaccia in the preheated oven for about 20-25 minutes until golden brown.

Sun Dried Tomato Pesto

  1. 8

    Blend Ingredients

In a food processor, combine sun-dried tomatoes, basil leaves, pine nuts, parmesan cheese, and garlic cloves.

  2. 9

    Add Olive Oil

While processing, slowly drizzle in olive oil until the mixture is smooth. Season with salt and pepper to taste.

Olive Tapenade

  1. 10

    Prepare Ingredients

In a food processor, combine black olives, green olives, capers, and garlic.

  2. 11

    Blend Together

Pulse the ingredients until coarsely chopped. Add olive oil and lemon juice, then pulse again until combined.

Basil Sauce

  1. 12

    Blend the Sauce

In a blender or food processor, combine basil leaves, olive oil, and parmesan cheese.

  2. 13

    Season

Blend until smooth, then season with salt and pepper to taste.

To Serve

  1. 14

    Assemble the Dish

Once the focaccia is baked, let it cool slightly. Cut into pieces and serve warm with burrata cheese, sun-dried tomato pesto, olive tapenade, and basil sauce on the side.

  2. 15

    Garnish

Top with fresh basil leaves for an aromatic finish.
