Method

Preparation

  1. 1

    Prepare the Beef

Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps in even cooking.

  2. 2

    Season the Steaks

Generously season both sides of the filet mignon with kosher salt, freshly ground black pepper, and garlic powder. Rub the seasoning into the meat for better flavor absorption.

Cooking

  1. 3

    Preheat the Pan or Grill

Heat a heavy skillet or grill over medium-high heat for about 5 minutes. If using a skillet, you may add 1 tablespoon of olive oil to prevent sticking.

  2. 4

    Sear the Filet Mignon

Add 1 tablespoon of olive oil to the pan (if using a skillet) and place the filet mignon in the hot pan. Sear for about 4-5 minutes on one side without moving it, until a nice brown crust forms.

  3. 5

Flip and Cook the Other Side

Carefully flip the steak over using tongs. For medium-rare, cook for an additional 3-4 minutes. Adjust the time according to your desired doneness.

  4. 6

    Optional Baste with Butter

If desired, during the last minute of cooking, add 2 tablespoons of butter and fresh rosemary to the pan. Baste the steaks with the melted butter for added flavor.

  5. 7

    Rest the Steaks

Remove the filet mignon from the heat and place it on a cutting board. Cover loosely with foil and let it rest for about 5-10 minutes to allow the juices to redistribute.

Serving

  1. 8

    Slice and Serve

After resting, slice the filet mignon against the grain and serve immediately with your favorite sides.
