Method

Preparation

  1. 1

    Cut the Potatoes

Wash and peel the Russet potatoes, then cut them into thin strips, approximately 1/4 inch thick.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

Cooking

  1. 3

    Preheat the Oven

Preheat your oven to 425°F (220°C) to prepare for baking the fries.

  2. 4

    Dry the Potatoes

After soaking, drain the potatoes and thoroughly dry them with a clean kitchen towel or paper towels.

  3. 5

    Melt the Duck Fat

In a large oven-safe skillet, add the duck fat and place it in the preheated oven until melted, about 5-10 minutes.

  4. 6

    Coat the Potatoes

Remove the skillet from the oven, carefully add the dried potato strips, and toss to coat them evenly with the melted duck fat.

  5. 7

    Season the Potatoes

Sprinkle the sea salt, black pepper, garlic powder, and fresh herbs over the potatoes, and toss again to distribute the seasonings evenly.

  6. 8

    Bake the Fries

Return the skillet to the oven and bake the fries for 25-30 minutes, turning them halfway through, until they are golden brown and crispy.

  7. 9

    Serve

Once cooked, remove the fries from the oven and let them cool slightly before serving. Enjoy your duck fat fries hot!
