In a large bowl, combine the peeled and deveined shrimp with salt and black pepper. Toss to coat evenly.

Dredge each shrimp in cornstarch, shaking off the excess. Dip the shrimp into the beaten egg, then coat with panko breadcrumbs, pressing gently to adhere.

In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the breaded shrimp to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Mix the Slaw Ingredients
In a large bowl, combine the shredded green cabbage, grated carrot, sliced red bell pepper, sliced green onions, and chopped cilantro.

In a small bowl, whisk together lime juice, honey, and salt until well combined.

Combine Slaw and Dressing
Pour the dressing over the slaw mixture and toss until the vegetables are evenly coated. Set aside to marinate for at least 10 minutes.

In a medium bowl, combine mayonnaise, Sriracha sauce, lime juice, garlic powder, and salt. Stir until smooth and well blended.

Taste the sauce and adjust the seasoning if necessary, adding more Sriracha for heat or more lime juice for tang.
