Cake Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it’s hot enough for baking the cakes.
Melt Chocolate and Butter
In a medium saucepan over low heat, combine the unsweetened chocolate and unsalted butter. Stir continuously until melted and smooth. Remove from heat and let it cool slightly.
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until pale and fluffy, about 2-3 minutes.
Add Flour and Salt
Sift the all-purpose flour and salt over the chocolate mixture. Gently fold it in using a spatula until just combined. Be careful not to overmix.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will still be soft.
Cool and Serve
Remove from the oven and let the cakes cool for 1 minute. Run a knife around the edges to loosen. Invert onto plates and serve immediately.
