Preparation
Marinating the Ribeye
In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, and Worcestershire sauce. Rub this mixture all over the ribeye steaks. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.
Preparing the Sides
If you are using asparagus and baby potatoes, rinse them under cold water. Trim the ends of the asparagus and cut the baby potatoes in half.
Cooking
Cooking the Ribeye
Preheat your grill or skillet over medium-high heat. Remove the ribeye from the marinade and let excess marinade drip off. Season both sides generously with salt and black pepper. Place the steaks on the grill or skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
Cooking the Sides
While the steaks are cooking, in a separate pot, bring salted water to a boil. Add the baby potatoes and cook until tender, about 15 minutes. In the last 5 minutes of cooking, add the asparagus to the pot. Drain and serve with a drizzle of olive oil and a sprinkle of salt.
Serving
Plating
Once the ribeye steaks are cooked to your liking, remove them from the heat and let them rest for 5 minutes. Slice against the grain and serve alongside the asparagus and baby potatoes. Enjoy your King Charles Cut Ribeye!
