    Prepare the Shrimp

    In a medium bowl, combine the flour, cornstarch, salt, and black pepper. In another bowl, beat the eggs. Place the panko breadcrumbs in a third bowl. Dip each shrimp first in the flour mixture, then in the egg, and finally in the panko breadcrumbs, ensuring they are well coated.

    Fry the Shrimp

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 180°C). Fry the shrimp in batches for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Make the Slaw

    In a large bowl, combine the shredded cabbage, shredded carrots, and sliced green onions. In a small bowl, whisk together the rice vinegar, mayonnaise, sugar, and salt until smooth. Pour the dressing over the cabbage mixture and toss until well coated.

    Prepare the Bang Bang Sauce

    In a medium bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and well combined.

Assembly

    To serve, place a generous portion of the slaw on each plate. Top with the crispy shrimp and drizzle with the Bang Bang Sauce. Serve immediately.
