Preparation of Salad Base

Wash and Prepare Greens
Thoroughly wash the organic Yuma AZ greens under cold water. Spin dry and place in a large salad bowl.

Add Croutons
Sprinkle the croutons evenly over the greens and cucumber in the salad bowl.
Cooking and Preparing Toppings

Cook Bacon
In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove and drain on paper towels, then chop into bite-sized pieces.

Prepare Cheeses
Grate the cheddar cheese and crumble the aged gorgonzola. Set aside.

Fry Capers
In the same skillet used for bacon, add a small amount of oil if needed and heat over medium-high. Add the capers and fry until they start to pop and turn golden, about 2-3 minutes. Remove and drain on paper towels.

Marinate Heirloom Tomatoes
If not already marinated, cut heirloom tomatoes into bite-sized pieces and marinate them in olive oil, balsamic vinegar, salt, and pepper for at least 30 minutes.

Combine Ingredients
Once all components are prepared, combine the greens, cucumber, and croutons in the salad bowl.

Top the salad with crispy bacon, cheddar cheese, crumbled gorgonzola, marinated heirloom tomatoes, and fried capers.

Sprinkle toasted black pepper over the top for added flavor. Toss gently to combine all ingredients. Serve immediately.
