Prepare the Marinade
In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, chopped parsley, cumin, paprika, salt, and black pepper. Whisk together until well combined.

Marinate the Steak
Place the skirt steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.

Preheat the Grill
Preheat your grill to high heat, around 450-500°F (232-260°C). If using a grill pan, place it over medium-high heat on the stovetop.

Cook the Steak
Remove the steak from the marinade and let excess marinade drip off. Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer to check for an internal temperature of 130-135°F (54-57°C) for medium-rare.

Rest the Steak
Once cooked, transfer the steak to a cutting board and let it rest for 5-10 minutes. This allows the juices to redistribute and enhances the flavor.
