    Prepare Thai Tea

    In a medium saucepan, bring 2 cups of water to a boil. Add Thai tea leaves and simmer for 5 minutes. Strain and let cool.

    Make Cake Batter

    In a large bowl, whisk together sugar, flour, baking powder, and salt. In another bowl, beat the eggs, then add cooled Thai tea, vanilla extract, and coconut milk. Combine wet and dry ingredients until just mixed.

    Bake the Cake

    Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan. Pour the batter into the pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Let it cool.

MILK SOAK

    Prepare Milk Soak

    In a bowl, whisk together condensed milk, evaporated milk, and coconut milk until smooth.

    Soak the Cake

    Once the cake has cooled, poke holes all over the surface with a fork. Slowly pour the milk soak mixture over the cake, allowing it to absorb.

POACHED PEAR

    Prepare Poaching Liquid

    In a saucepan, combine water, sugar, Thai tea leaves, and lemon juice. Bring to a boil.

    Poach the Pears

    Add the peeled and cored pears to the boiling liquid. Reduce the heat and simmer for 20-25 minutes until tender. Remove pears and let cool. Slice thinly.

WHIPPED CREAM

    Whip the Cream

    In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form. Keep refrigerated until serving.

HONEY BOBA

    Cook Tapioca Pearls

    In a pot, bring 4 cups of water to a boil. Add tapioca pearls and cook according to package instructions, usually about 30 minutes.

    Prepare Honey Boba

    Once cooked, drain the pearls and rinse with cold water. In a bowl, mix the pearls with honey until well coated.
