Calamari Preparation

Prepare the Coating
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off excess flour.

Heat the Oil
In a large wok or deep frying pan, heat the vegetable oil over medium-high heat until shimmering.

Fry the Calamari
When the oil is hot, add the coated calamari in batches. Fry for 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Remove the fried calamari with a slotted spoon and place them on paper towels to drain excess oil.

Sauté Aromatics
In the remaining hot oil, add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.

Add Green Onions and Cilantro
Add the chopped green onions and cilantro, stirring quickly for another minute.

Combine Calamari with Aromatics
Return the fried calamari to the wok, tossing to combine with the aromatics.

In a small bowl, whisk together mayonnaise, Sriracha sauce, and lime juice until smooth.

Serve the calamari hot, garnished with additional green onions and cilantro, alongside the dynamite dip.
