Prepare the Filling
In a medium bowl, combine ground pork, shallots, garlic, grated ginger, soy sauce, sesame oil, and green onions. Mix well until all ingredients are evenly combined. Set aside.

Assemble Potstickers
Take a wonton wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water using your finger. Fold the wrapper in half to form a triangle, pressing the edges tightly to seal. You can pleat the edges for a decorative finish if desired. Repeat this step until all filling is used.

Cook the Potstickers
Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the potstickers in a single layer, ensuring they do not touch. Cook for 2-3 minutes until the bottoms are golden brown.

Steam the Potstickers
Carefully add 1/4 cup of water to the skillet and immediately cover with a lid. Allow the potstickers to steam for about 5-7 minutes or until the water evaporates and the potstickers are cooked through.

Serve
Remove the potstickers from the skillet and serve hot with your favorite dipping sauce.
