Marinate the Chicken
In a large bowl, combine minced garlic, finely chopped lemongrass, fish sauce, brown sugar, turmeric powder, black pepper, and vegetable oil. Mix well to create a marinade.

Prepare the Chicken
Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Chicken
Place the marinated chicken thighs on a baking tray lined with parchment paper, skin side up. Roast for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
