Chicken Marinade

    Marinate the Chicken

    In a large bowl, combine the gochujang, soy sauce, minced garlic, grated ginger, sugar, and black pepper. Add the chicken thighs and toss to coat thoroughly. Cover and refrigerate for at least 1 hour, or overnight for best results.

Breading and Frying

    Prepare the Breading

    In a separate bowl, mix together the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold water until you have a smooth batter.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chicken

    Remove the marinated chicken from the refrigerator. Dip each piece in the batter, allowing excess to drip off. Carefully place the chicken in the hot oil, frying in batches to avoid overcrowding. Fry for about 6-8 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Gochujang Mayo

    Make the Gochujang Mayo

    In a small bowl, mix together the mayonnaise, gochujang, lemon juice, and garlic powder until smooth. Adjust seasoning as needed.

Sliders Assembly

    Assemble the Sliders

    Slice the slider buns in half. Spread a generous amount of gochujang mayo on the bottom half of each bun. Place a piece of fried chicken on top, followed by a slice of pickle and a lettuce leaf. Top with the other half of the bun. Repeat with the remaining buns and ingredients.
