In a large bowl, combine coconut milk, soy sauce, lime juice, minced garlic, grated ginger, brown sugar, and red chili flakes. Stir well to combine.

Add the jumbo shrimp to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

While the shrimp is marinating, soak the wooden skewers in water for about 15 minutes. This prevents them from burning on the grill.
