Shrimp Satay

    Marinate the Shrimp

    In a large bowl, combine coconut milk, soy sauce, lime juice, minced garlic, grated ginger, brown sugar, and red chili flakes. Stir well to combine.

    Coat the Shrimp

    Add the jumbo shrimp to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

    Prepare the Skewers

    While the shrimp is marinating, soak the wooden skewers in water for about 15 minutes. This prevents them from burning on the grill.

    Assemble the Satay

    After marinating, thread the shrimp onto the soaked skewers, about 4-5 shrimp per skewer.

    Grill the Satay

    Preheat the grill to medium-high heat. Grill the shrimp skewers for about 2-3 minutes on each side or until they are opaque and cooked through.

Chili-Tamarind Butter

    In a mixing bowl, combine softened unsalted butter, tamarind paste, chili powder, honey, and salt. Mix until smooth and well blended.

    Once the shrimp satay is grilled, remove it from the grill and serve immediately with the chili-tamarind butter on the side for dipping.
