Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into evenly sized strips, about 1/4 inch thick, to ensure even cooking.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps achieve crispiness.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the oil temperature for accurate frying.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture, which can cause the oil to splatter.

Fry the Potatoes
Carefully add a batch of dried potato strips to the hot oil. Fry them for about 5-7 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.

Season the Fries
Once the fries are cooked, remove them from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt to taste.
