Crispy Chicken Spring Rolls

Prepare the filling
In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

Cook the chicken
Add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until fully cooked (about 5-7 minutes).

Add vegetables
Stir in the grated carrot, shredded cabbage, chopped green onions, soy sauce, salt, and pepper. Cook for an additional 3-4 minutes until the vegetables are tender but still crisp.

Cool the mixture
Remove the skillet from the heat and let the chicken mixture cool for about 10 minutes.

Wrap the spring rolls
Place a spring roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the chicken filling onto the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to form a spring roll. Repeat with remaining wrappers and filling.

Heat the oil
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the spring rolls
Carefully add the wrapped spring rolls to the hot oil in batches, frying until golden brown and crispy (about 3-4 minutes per side). Remove and place on paper towels to drain excess oil.

Serve the crispy chicken spring rolls hot with a dipping sauce of your choice.
