Prepare the filling
In a large mixing bowl, combine the ground chicken, grated ginger, minced garlic, chopped green onions, soy sauce, sesame oil, black vinegar, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the wontons
Take a wonton wrapper and place about one tablespoon of the chicken filling in the center. Dip your finger in water and moisten the edges of the wonton wrapper. Fold the wrapper in half to create a triangle, pressing out any air. Seal the edges tightly. Optionally, you can bring the two corners of the triangle together and pinch to form a tortellini shape.

Cook the wontons
Bring a large pot of water to a boil. Carefully add the prepared wontons to the boiling water in batches, making sure not to overcrowd the pot. Cook for about 4-5 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon and drain.

Serve
Serve the wontons hot with additional soy sauce or black vinegar on the side for dipping. Enjoy!
