Vietnamese Coffee Ice Cream

Condensed Caramel

Method

Doughnuts

  1. 1

    Prepare the batter

In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves until well combined.

  2. 2

    Mix wet ingredients

In another bowl, whisk together the milk, eggs, vanilla extract, and melted butter until smooth.

  3. 3

    Combine ingredients

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

  4. 4

    Heat oil

In a deep pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

  5. 5

    Fry the doughnuts

Spoon the batter into a doughnut pan or pipe it into shapes and carefully place them in the hot oil. Fry until golden brown, about 2-3 minutes on each side.

  6. 6

    Drain and cool

Remove doughnuts from oil and drain on paper towels. Allow to cool slightly before serving.

Vietnamese Coffee Ice Cream

  1. 7

    Mix ice cream base

In a mixing bowl, whisk together the heavy cream, sweetened condensed milk, instant coffee granules, milk, and vanilla extract until well combined.

  2. 8

    Chill mixture

Cover the mixture and refrigerate for at least 2 hours, or until well chilled.

  3. 9

    Churn ice cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  4. 10

    Freeze ice cream

Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.

Condensed Caramel

  1. 11

    Make caramel

In a saucepan over medium heat, add the granulated sugar and cook until it melts and turns a golden brown color, stirring occasionally.

  2. 12

    Add butter

Once the sugar is melted, remove from heat and quickly whisk in the unsalted butter until fully melted and combined.

  3. 13

    Incorporate cream

Slowly pour in the heavy cream while whisking continuously until the mixture is smooth and creamy.

  4. 14

    Cool and store

Let the caramel cool before transferring it to a jar for storage. It can be served warm or at room temperature.
