Prepare the Filling
In a large bowl, combine the shredded chicken, black beans, corn, jalapeño Jack cheese, diced red bell pepper, and chopped spinach. Mix well and season with salt and black pepper.

Assemble the Eggrolls
Lay a tortilla flat on a clean surface. Place about 1/4 cup of the filling in the center of the tortilla. Fold the sides in and roll tightly to form an eggroll. Repeat with remaining tortillas and filling.

Cook the Eggrolls
In a large skillet, heat the olive oil over medium heat. Add the eggrolls seam side down and cook until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
