    Slice the bell peppers and onion into thin strips. Chop the cilantro and set aside.

    In a separate skillet or microwave, warm the flour or corn tortillas until pliable.

    On a large platter, serve the sautéed veggies alongside the Mexican rice, black beans, warm tortillas, sour cream, pico de gallo, and shredded cheese. Offer guacamole on the side, if requested.
