    Prepare the Asparagus

    Preheat the oven to 400°F (200°C). Trim the ends of the asparagus and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper. Toss to coat evenly.

    Roast the Asparagus

    Roast the asparagus in the preheated oven for about 15-20 minutes, or until tender and slightly crispy.

    Cook the Sirloin

    While the asparagus is roasting, season the sirloin steak with salt and black pepper on both sides. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the sirloin and cook for about 4-5 minutes on each side for medium rare, or until desired doneness.

    Add Chipotle Pesto

    During the last minute of cooking, drizzle the chipotle pesto over the sirloin and let it warm through.

    Serve

    Remove the sirloin from the skillet and let it rest for a few minutes. Serve the steak topped with fresh cilantro and pico de gallo alongside the roasted asparagus.
