    Marinate the Steak

    In a bowl, combine olive oil, lime juice, minced garlic, cumin, salt, and pepper. Add the flank steak and coat well. Cover and marinate for at least 30 minutes or overnight in the refrigerator.

    Prepare the Cilantro Pesto

    In a food processor, blend chopped cilantro, pine nuts (or walnuts), and a pinch of salt. Gradually add olive oil until the mixture becomes a smooth paste. Set aside.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for a few minutes before slicing.

    Assemble the Dish

    Slice the steak against the grain. Serve on warm flour tortillas topped with a drizzle of cilantro pesto, a squeeze of lime, and a generous spoonful of pico de gallo. Accompany with Mexican rice and black beans.
