Prepare the Chicken
Cut the boneless chicken breast into bite-sized pieces and set aside.

Make the Breading
In a bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. In another bowl, whisk the eggs with buttermilk.

Bread the Chicken
Dip each piece of chicken in the egg mixture, then coat it in the flour mixture. Place breaded chicken on a wire rack.

Fry the Chicken
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the chicken pieces in batches until golden brown and fully cooked, about 6-8 minutes. Remove and drain on paper towels.

Toss in Sauce
In a large bowl, toss the fried chicken pieces in your choice of buffalo sauce or BBQ sauce until evenly coated.

Serve the boneless wings with house-made ranch on the side for dipping.
