1. Prepare the Wings
Preheat your oven to 250°F (120°C). Pat the chicken wings dry with paper towels. In a large bowl, combine the baking powder, salt, black pepper, garlic powder, and paprika. Toss the wings in the seasoning mixture until well coated.
2. Bake the Wings
Arrange the wings on a wire rack placed on a baking sheet. Bake in the preheated oven for 30 minutes to render the fat.
3. Fry the Wings
After baking, heat oil in a deep fryer or a heavy pot to 375°F (190°C). Fry the wings in batches for about 8-10 minutes, or until golden brown and crispy.
4. Toss in Sauce
Remove the wings from the oil and let them drain on paper towels. Toss the hot wings with your choice of sauces (such as buffalo, barbecue, or garlic parmesan) until fully coated.
5. Serve with Ranch
Serve the wings hot with two sides of house-made ranch dressing for dipping.
