    In a medium bowl combine ground pork and chopped shrimp (if using). Mix gently to break up the meat but don't overwork.

    Add the finely chopped green onions, grated ginger, minced garlic, soy sauce, sesame oil, Shaoxing wine, salt, white pepper, and cornstarch to the meat. Fold until evenly combined and slightly tacky. Taste a tiny bit by cooking a pinch in a spoon to check seasoning and adjust salt or soy if necessary.

Assemble wontons

    Prepare a clean work surface and a small bowl of cold water for sealing. Keep wonton wrappers covered with a damp towel to prevent drying.

    Place 1 teaspoon of filling in the center of a wonton wrapper (about 30 wrappers will yield ~28–30 wontons). Do not overfill—too much will make sealing difficult.

    Moisten the edges of the wrapper with a fingertip dipped in cold water. Fold wrapper in half to form a triangle (for square wrappers) or bring opposite edges together (for round wrappers). Press out air and seal edges firmly.

    Optional decorative fold: bring the two corners of the triangle together and press to seal, creating a little pouch. Place finished wontons on a lightly floured tray, spaced so they don’t stick.

Cooking the wontons

    Boiled (traditional)

    Bring a large pot of water to a rolling boil and add a pinch of salt. Add wontons in batches so they have room to move. Stir gently to prevent sticking. Cook for 3–4 minutes until wrappers are translucent and filling is cooked through (internal temp 165°F/74°C). Remove with a slotted spoon and drain.

    Pan-fried (potstickers)

    Heat 2 tablespoons vegetable oil in a nonstick skillet over medium heat. Add wontons in a single layer and brown the bottoms 2–3 minutes. Carefully pour 1/3 cup water into the pan (watch for splatter), cover immediately and steam 3–4 minutes until water evaporates and wrappers are cooked. Uncover and crisp bottoms 1 minute more. Remove to a plate lined with paper towel.

Spicy sauce

    In a small bowl combine chili oil, soy sauce, black or rice vinegar, toasted sesame oil, sugar, minced garlic and ginger. Whisk to combine.

    Add 2 tablespoons warm water or chicken broth to thin the sauce to a spoonable consistency. Adjust balance: add more sugar for sweetness, more vinegar for tang, or more chili oil for heat.

    Stir in chopped cilantro if using and taste; adjust salt with a few drops of soy sauce if needed.

To serve

    Place cooked wontons on a serving plate. Spoon the spicy sauce over the wontons or serve the sauce on the side for dipping.

    Garnish with sliced scallions, cilantro leaves, and chopped peanuts or toasted sesame seeds. Serve immediately with lime wedges on the side for brightness.
