Rinse the okra under cold running water. Pat dry thoroughly with a clean towel to reduce sliminess.

Trim the stem tips of each okra pod (about 2–3 mm) without cutting into the pod. Leave pods whole for poaching so they retain shape.

Slice the garlic thinly, peel and thinly slice the ginger, and slice the scallions on a bias separating whites and greens for later use.
Make poaching liquid

Combine and heat
In a wide, shallow saucepan or skillet, combine 3 cups water, 2 tablespoons white wine vinegar, 1 tablespoon mirin, 1 tablespoon light soy sauce, 1 teaspoon granulated sugar, 1 teaspoon kosher salt, and 1 teaspoon dried red chili flakes. Stir to dissolve sugar and salt.

Bring the mixture to a gentle simmer over medium heat. Do not boil vigorously; you want small, steady bubbles.
Poach okra

Add the whole okra pods to the simmering poaching liquid in a single layer. If necessary, poach in batches so pods are not stacked. The liquid should barely cover the pods; add up to 1/2 cup more water if needed.

Reduce heat to maintain a gentle simmer and poach the okra until tender but still vibrant green, about 6–8 minutes depending on pod size. Test one by inserting the tip of a paring knife—should meet slight resistance but not be mushy.

During the last 1–2 minutes of poaching, add the sliced garlic, sliced ginger, and the white parts of the scallions to the liquid so they soften and infuse flavor.

Let okra sit in ice water for about 1 minute, then drain and pat dry on paper towels. Reserve.
Finish in pan

Increase heat under the poaching liquid to medium-high and boil until reduced by about one-third and slightly syrupy, roughly 4–6 minutes. Taste and adjust seasoning with a pinch of salt or 1/2 teaspoon soy if needed. Remove from heat.

In a separate small skillet, heat 1 tablespoon neutral oil over medium heat. Add the softened garlic and ginger pieces (removed from poaching liquid) and quickly sauté 30–45 seconds to bloom flavor—do not burn.

Add the drained okra to the reduced poaching liquid in the wide skillet and toss gently to coat and warm for 30–60 seconds so flavors marry. Alternatively, spoon reduced sauce over arranged okra.
Garnish & serve

Arrange the poached okra on a serving platter. Drizzle with 1 teaspoon toasted sesame oil and the reserved sautéed garlic and ginger.

Scatter the green scallion slices, 1 teaspoon toasted sesame seeds, and cilantro leaves (if using) over the okra. Finish with freshly ground black pepper to taste.

Serve warm or at room temperature as a side dish or cold appetizer. Leftovers keep in an airtight container in the refrigerator up to 2 days; reheat briefly or serve chilled.
