Method

Prepare the Chips

Cut the Potatoes

Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide. Rinse the potato strips under cold water to remove excess starch.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This will help to make them crispier when fried.

Dry the Potatoes

After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

Heat Oil for Frying

In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C).

First Fry (Blanching)

Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes until they are tender but not browned. Remove and drain on paper towels.

Increase Oil Temperature

Increase the oil temperature to 375°F (190°C) for the second fry.

Second Fry

Fry the blanched potato strips again in batches for about 3-4 minutes until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and thick.

Heat Oil for Frying

In a separate pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Coat the Fish

Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish

Carefully place the battered fish fillets into the hot oil. Fry for about 4-6 minutes, or until golden brown and crispy. Remove and drain on paper towels.

Plate and Serve

Serve the hot fish and chips on a plate with tartar sauce and lemon wedges on the side.
