1. Prepare the Chipotle Chicken
If not already cooked, grill or sauté chicken breasts seasoned with chipotle seasoning until fully cooked, then shred or dice.
2. Mix the Filling
In a bowl, combine the shredded chipotle chicken, diced Hatch green chilies, shredded Monterey Jack cheese, and softened cream cheese. Stir until well combined.
Quesadilla Assembly
3. Assemble the Quesadilla
Place one tortilla on a clean surface. Spread a generous amount of the filling mixture over half of the tortilla, then fold the tortilla over to create a half-moon shape.
4. Cook the Quesadilla
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes until the bottom is golden brown and crispy.
5. Flip and Finish
Carefully flip the quesadilla using a spatula. Add the remaining tablespoon of olive oil if necessary, and cook for an additional 3-4 minutes until the other side is golden and crispy.
