Prepare the Steak
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the ribeye steak with salt and black pepper. Add the steak to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for a few minutes before slicing it thinly.

Cook the Vegetables
In the same skillet, add another tablespoon of olive oil. Sauté the diced onion, green bell pepper, and minced garlic until they are softened, about 4-5 minutes.

Make the Cheese Sauce
In a small saucepan, melt the cheddar cheese over low heat until smooth. If needed, add a splash of milk to achieve desired consistency.

Serve
Drizzle the creamy cheese sauce over the filled steak rolls. Serve immediately.
