1. Prepare the Salmon
Preheat your oven to 400°F (200°C). Season the salmon fillets with salt and black pepper. Place them on a baking sheet lined with parchment paper.
2. Roast the Tomatoes
Cut the cherry tomatoes in half and add them to the baking sheet with the salmon. Drizzle with olive oil, and season with salt and black pepper. Roast in the oven for about 15-20 minutes, until the salmon is cooked through and the tomatoes are blistered.
3. Make the Vinaigrette
In a small bowl, whisk together the balsamic vinegar, honey, and the juice of half a lemon. Adjust seasoning with salt and pepper if necessary.
4. Assemble the Sandwich
Slice the brioche rolls in half. On the bottom half, layer the field greens, followed by the roasted salmon and tomatoes. Drizzle with the vinaigrette and top with the other half of the brioche roll.
