Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt and pepper. Place it in a baking dish and cover it with foil. Bake for 2.5 to 3 hours until tender.

Prepare the Sweet and Spicy Sauce
In a small saucepan, combine sweet and spicy sauce ingredients (like honey, soy sauce, chili flakes, and garlic). Simmer on low heat for about 10 minutes until thickened.

Sear the Pork Belly
Once the pork belly is done, remove it from the oven and let it rest for 10 minutes. Cut it into bite-sized pieces. Heat a skillet over medium-high heat and sear the pork belly pieces until crispy on all sides.

Assemble the Tacos
Warm the flour tortillas in a dry skillet or microwave. Layer the crispy pork belly, diced pineapple, chopped cilantro, and onion on each tortilla. Drizzle with lime juice and the sweet and spicy sauce.

Serve the tacos immediately with extra lime wedges and sauce on the side.
