Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into even-sized strips, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with paper towels.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potatoes to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper. Toss to coat evenly.

Serve
Serve the fries hot with two sides of creamy cheese sauce for dipping.
