Prepare the Guinness Braised Onions
In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook until they are soft and translucent, about 5 minutes. Pour in the Guinness beer, season with salt and pepper, and let it simmer until the liquid reduces and the onions are caramelized, about 15-20 minutes. Set aside.

Cook the Beef Patties
In a mixing bowl, season the ground beef with salt and pepper. Shape it into 2 patties. In the same skillet, add a tablespoon of butter and cook the patties over medium-high heat for about 3-4 minutes on each side, until they are cooked to your desired doneness. During the last minute of cooking, place cheddar cheese on top of each patty to melt.

Assemble the Paddy Melt
Spread the minced garlic on one side of each slice of sourdough bread. On the other side, spread a thin layer of the Burger-zing sauce. Place one patty on a slice of bread, top it with the Guinness braised onions, crumbled bacon, and a slice of American cheese. Top with another slice of bread, garlic side down.

Grill the Sandwich
In the same skillet, melt another tablespoon of butter over medium heat. Grill the sandwich for about 3-4 minutes on each side, until the bread is golden brown and crispy and the cheeses have melted.

Serve
Remove from the skillet, slice in half, and serve hot with your favorite sides.
