Prepare the Pie Crust
In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roll out the Crust
On a floured surface, roll out the chilled dough to fit a 9-inch pie dish. Transfer the crust to the dish and trim the excess.

Prepare the Filling
In a mixing bowl, whisk together the heavy cream, eggs, lemon juice, salt, and pepper. Stir in the chopped baby lobsters, Gruyère cheese, and parsley.

Pour the lobster mixture into the prepared pie crust, spreading it evenly.
