Prepare the Chicken
Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with salt, black pepper, and a tablespoon of olive oil. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from grill and let rest.

Roast the Tomatoes
While the chicken is grilling, slice the Roma tomatoes in half and place them cut side up on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in a preheated oven at 400°F (200°C) for about 15-20 minutes until soft and slightly caramelized.

Make the Vinaigrette
In a small bowl, whisk together the balsamic vinegar, juice of the lemon, and a tablespoon of olive oil. Season with salt and pepper to taste.

Assemble the Sandwich
Slice the brioche rolls in half. On the bottom half, layer the grilled chicken, roasted tomatoes, and field greens. Drizzle with the vinaigrette and top with the other half of the brioche roll. Serve immediately.
