Prepare the Fish
In a large bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold water to create a smooth batter. Heat oil in a deep skillet or fryer to 350°F (175°C). Dip cod fillets into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry until golden brown and cooked through, about 4-6 minutes. Remove and drain on paper towels.

Make the Spicy Lime Crema
In a small bowl, mix together sour cream, lime juice, and hot sauce. Adjust seasoning to taste and set aside.

Assemble the Tacos
On a warm tortilla, place a generous amount of shredded iceberg lettuce, followed by fried cod, jalapeño slices, pico de gallo, and a drizzle of spicy lime crema. Top with fresh cilantro.
