Prepare the Lobster
If using whole lobsters, steam them for about 10-12 minutes until cooked. Allow them to cool, then remove the meat from the claws and tails, and chop into bite-sized pieces.

Make the Dressing
In a large bowl, combine the mayonnaise, diced celery, diced red onion, lemon juice, salt, and black pepper. Mix until well combined.

Combine Ingredients
Gently fold the lobster meat into the dressing mixture until the lobster is well coated.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

Assemble the Rolls
Fill each New England style bun with the chilled lobster mixture. Top with chopped fresh chives for garnish.
