Bagel Preparation

Prepare the Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine bread flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape the Bagels
Preheat your oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole through the center to shape it into a bagel. Place on a baking sheet dusted with cornmeal.

Boil the Bagels
In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 30 seconds on each side. Remove with a slotted spoon and return to the baking sheet.

Bake the Bagels
Sprinkle your desired toppings on the bagels. Bake in the preheated oven for 20-25 minutes until golden brown. Remove from oven and let cool on a wire rack.
