Prepare peaches
Wash, pit, and roughly chop peaches until you have about 4 cups packed. If peaches are very ripe, you can leave skins on for color and flavor; otherwise peel them by blanching 30 seconds in boiling water, then shocking in ice water and slipping off skins.

Make simple syrup
In a small saucepan combine 60 ml water and 3 tbs granulated sugar. Warm gently over medium heat just until sugar dissolves, stirring. Remove from heat and let cool to warm (about 5 minutes). Stir in 1 tbs light corn syrup and 1 tsp vanilla bean paste. The corn syrup helps keep the sorbet smooth.

Blend
Place the chopped peaches and 2 tbs fresh lemon juice into a blender or food processor. Add the cooled syrup. Puree on high until perfectly smooth, about 30–60 seconds. Taste and adjust acidity with up to 1 more teaspoon lemon juice or sweetness with a touch more sugar if needed.

Chill
Strain the puree through a fine-mesh sieve into a bowl to remove any fibers for an ultra-silky sorbet. Press solids with a spatula and discard. Cover and chill the peach purée thoroughly in the refrigerator for at least 1 hour, preferably 2 hours, until very cold (this improves texture when churning).

Churn
Pour the chilled peach purée into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes). If you do not have an ice cream maker, freeze in a shallow metal pan, stirring vigorously every 20–30 minutes as it firms to break up ice crystals until smooth.

Harden
Transfer the churned sorbet to a shallow airtight container, smoothing the top. Press a piece of plastic wrap directly onto the surface to prevent ice crystals. Freeze for at least 2 hours to firm up to scoopable texture.
Champagne Finish

Scoop and assemble
Scoop 1 large or 2 small balls of the white peach sorbet into chilled Champagne flutes or coupe glasses. Work quickly so the sorbet doesn't melt.

Top with Champagne
Gently pour chilled Champagne (about 60–75 ml per glass) over the sorbet so it fizzes and creates a light foam. For a single-batch estimate, pour 250 ml across 4 glasses (≈60–65 ml each).

Garnish and serve
Garnish each glass with a thin slice of white peach and a small sprig of mint if desired. Serve immediately with a small spoon so guests can enjoy the sorbet and sparkling wine together.

Notes on timing and texture
Because Champagne will melt the sorbet, keep sorbet very cold and assemble just before serving. For a stronger peach flavor, let the sorbet soften slightly and fold in 1–2 tablespoons of finely diced fresh peach before refreezing briefly; this step is optional.
