    Make simple syrup

    Combine the granulated sugar and water in a small saucepan. Warm over medium heat, stirring occasionally, just until the sugar dissolves and the liquid is clear (do not boil). Remove from heat and let cool to room temperature, about 15–20 minutes.

    Prepare passion fruit pulp

    If using fresh passion fruits, cut them in half and scoop out the pulp and seeds until you have 2 cups. If you prefer a seed-free sorbet, press the pulp through a fine-mesh sieve using the back of a spoon to extract the juice, discarding seeds. If using frozen pulp, thaw and measure 2 cups.

    Combine base ingredients

    In a bowl, mix the cooled simple syrup with the passion fruit pulp (strained or unstrained depending on preference). Stir in the fresh lime juice and a pinch of salt. Taste and adjust sweetness or acidity: add up to 1–2 tbs more sugar syrup if too tart, or more lime juice if too sweet.

    Chill mixture

    Cover the mixture and chill in the refrigerator until very cold, at least 2 hours (or up to overnight). Chilling ensures faster, smoother freezing and better texture.

    Churn the sorbet

    If you have an ice cream maker: Pour the chilled mixture into the ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes). If using the freeze-and-spoon method: Pour the mixture into a shallow metal or glass pan, freeze for 45 minutes, then stir vigorously with a fork or whisk to break up ice crystals; repeat every 30–45 minutes until smooth and fully frozen (about 3–4 cycles).

    Improve scoopability (optional)

    If desired, stir in 1 tablespoon of vodka or light rum after churning; this lowers the freezing point slightly and makes the sorbet a bit softer at serving temperature. Mix thoroughly.

    Harden

    Transfer the churned sorbet to an airtight container and press a piece of parchment or plastic directly onto the surface to minimize ice crystal formation. Freeze for at least 2–4 hours to firm up.

Optional Finishing & Serving

    Scoop and serve: Remove the sorbet from the freezer about 5–10 minutes before serving to make scooping easier. Use a warm (briefly dipped in hot water and wiped dry) ice cream scoop for clean balls.

    Garnish: Serve scoops in chilled bowls or glasses. Garnish with fresh mint leaves and/or half passion fruits for visual appeal and extra aroma.

    Storage: Store any leftovers in an airtight container in the freezer for up to 2 weeks. Thaw for 5–10 minutes before serving to soften slightly.
