Make a simple syrup
Combine the granulated sugar and cold water in a small saucepan. Stir over medium heat until the sugar is completely dissolved and the mixture just comes to a simmer. Remove from heat and let the syrup cool to room temperature (about 15 minutes).

Prepare raspberries
While the syrup cools, rinse the raspberries gently and drain. Reserve about 12 berries for garnish and use the rest for the sorbet.

Puree and strain
Place the raspberries into a blender or food processor and pulse until smooth. Pour the purée through a fine-mesh sieve into a bowl, using a spatula to press the seeds and pulp through. Discard the seeds left in the sieve.

Combine flavors
Stir the cooled simple syrup into the strained raspberry purée. Add the fresh lemon juice and lemon zest. Taste and adjust sweetness or acidity: if too tart, add up to 1 more tablespoon sugar dissolved into a little warm water; if too sweet, add a little more lemon juice.

Add optional stabilizer
If using, whisk the corn syrup or glucose into the raspberry mixture—this improves scoopability by reducing large ice crystals. Chill the mixture thoroughly in the refrigerator until very cold, at least 1 hour (or up to 4 hours).

Churn the sorbet
Pour the cold raspberry mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes).

Harden the sorbet
Transfer the churned sorbet into a shallow airtight container. Press a piece of plastic wrap directly onto the surface to minimize ice crystals, then close the lid. Freeze for at least 2–4 hours until firm enough to scoop.

Before serving, remove the sorbet from the freezer and let it sit at room temperature 5–10 minutes to soften slightly for easier scooping.

Scoop the sorbet into bowls or cones. Garnish with the reserved whole raspberries and mint leaves. Serve immediately.

Storage: keep in an airtight container in the freezer for up to 2 weeks. For best texture, let soften a few minutes at room temperature before scooping.
