Merguez Sausages

Bring sausages to room temperature
Remove merguez from the refrigerator 20–30 minutes before cooking so they come closer to room temperature. This helps them cook evenly.

Season the sausages lightly with 1/2 tsp salt and 1/4 tsp freshly ground black pepper, turning so all sides are lightly seasoned.

Place the merguez in the hot skillet without crowding. Cook 3–4 minutes per side, turning every 3–4 minutes so they brown evenly — total 10–12 minutes depending on thickness. Use medium-high heat so they develop a good sear but do not burn; lower heat slightly if they brown too quickly.

Check doneness: internal temperature should reach 160°F (71°C) for lamb sausage. If needed, reduce heat to medium, cover loosely and cook a few more minutes until done.

Remove sausages to a plate, tent with foil and rest 5 minutes to redistribute juices.
Harissa Sauce

While sausages cook, make the harissa yogurt sauce. In a small bowl combine 3 tbs prepared harissa paste, 1/2 cup plain Greek yogurt, 1 tbs lemon juice, 1 tsp extra-virgin olive oil, and 1 minced garlic clove.

Transfer sauce to a serving bowl and keep refrigerated or at cool room temperature until ready to serve.

Prepare the quick salad: in a bowl combine 1 cup halved cherry tomatoes, 1 diced cucumber, 1/2 thinly sliced red onion and 1/4 cup chopped fresh parsley.

Slice the rested merguez into 1–1.5 inch (2–4 cm) pieces on a cutting board, or serve whole if preferred.

To assemble the assiette: arrange the sliced or whole merguez on a serving platter. Spoon the harissa yogurt sauce into a small bowl and place on the platter. Add the dressed tomato-cucumber salad alongside, tuck warm pitas at the edge and garnish with lemon wedges and extra parsley.
