Earl Grey Simple Syrup

    Brew syrup

    Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir occasionally until the sugar fully dissolves and the mixture comes to a gentle simmer (about 3–5 minutes).

    Steep tea

    Remove the pan from heat, add 2 Earl Grey tea bags, and steep for 8 minutes. Press the bags against the side of the pan with a spoon to extract flavor, then discard the bags.

    Cool and store

    Let the syrup cool to room temperature, then transfer to a clean bottle or jar. Chill in the refrigerator. Syrup keeps 1–2 weeks refrigerated.

Cocktail

    Prepare glass: If using crushed ice, fill a rocks or coupe-style glass with crushed ice and set aside to chill the glass. Alternatively, chill a coupe and skip the crushed ice.

    Combine ingredients: In a cocktail shaker, add 1.5 oz Botanist Gin, 0.5 oz St. George Spiced Pear, 0.75 oz fresh lemon juice, and 0.75 oz Earl Grey simple syrup.

    Add ice and shake: Fill the shaker with ice (about 1 cup). Shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

    Double strain: Double-strain the cocktail into the prepared glass over the crushed ice (or into a chilled coupe if not using crushed ice) to remove ice shards and any pulp.

    Garnish and finish: Float a thin pear slice on top and add a sprig of thyme or rosemary for aromatics. Express the herb over the drink by giving it a light clap between your hands before placing it on the cocktail.

    Serve: Serve immediately while chilled. Sip and enjoy the balance of bright lemon, floral Earl Grey, and spiced pear notes.
