    Chill and prepare coconut cream

    Place a can of full-fat coconut milk in the refrigerator overnight or at least 8 hours. When cold, open the can and scoop out only the thick cream that solidified at the top (about 1 cup). Reserve any leftover liquid for smoothies.

    Combine dry ingredients

    In a medium bowl, sift or whisk the unsweetened cocoa powder and fine sea salt to remove lumps and ensure even mixing.

    Beat base until smooth

    Add the chilled coconut cream, maple syrup, nut or seed butter, and vanilla extract to the bowl with cocoa. Using a sturdy spatula, wooden spoon, or an electric hand mixer on low, mix until very smooth and glossy. Scrape the sides and continue until the mixture holds together and can be scooped (about 1–2 minutes).

    Taste and adjust

    Taste the mixture and adjust sweetness or salt if necessary (add up to 1 additional tablespoon maple syrup for sweeter truffles, or a pinch more salt).

    Chill to firm up

    Cover the bowl with plastic wrap or transfer mixture to a shallow container and refrigerate for at least 2 hours (or 30–45 minutes in the freezer) until firm enough to scoop into balls.

Forming and Coating

    Prepare coating stations

    Place the cocoa powder, chopped toasted nuts, shredded coconut, and melted vegan chocolate (if using) in separate shallow bowls for rolling/dipping. Line a tray with parchment paper and set aside.

    Scoop and roll truffles

    Using a small cookie scoop or a teaspoon, scoop 1-tablespoon-sized portions of the chilled truffle mixture. Quickly roll each portion between your palms to form a smooth ball. Work briskly to prevent melting; if mixture softens, return to refrigerator for 10 minutes.

    Coat truffles

    Roll each truffle in your chosen coating: toss in cocoa powder for a classic finish, press into chopped nuts for crunch, or roll in shredded coconut. For a chocolate-dipped truffle, use a fork to dip each ball into melted vegan dark chocolate, let excess drip off, then place on parchment. If using melted chocolate, chill dipped truffles 10–15 minutes to set chocolate.

    After coating, refrigerate truffles for at least 20 minutes to firm completely. Store finished truffles in an airtight container in the refrigerator for up to 10 days or freeze for up to 1 month (thaw in refrigerator before serving).
