Prepare oysters
Pat the shucked Virginia oysters dry with paper towels to remove excess liquid. Set them on a plate and keep chilled until ready to batter. Discard any shells or broken pieces.

Make the dry mix
In a shallow bowl or wide dish, whisk together the all-purpose flour, cornstarch, cornmeal (if using), baking powder, kosher salt, black pepper, and cayenne pepper until evenly combined.

Make the batter
In a separate bowl, whisk the cold sparkling water (or beer) with the egg if using. Gradually pour the liquid into the dry mix while whisking gently until a smooth, slightly thick batter forms—similar to heavy cream. Do not overmix; a few small lumps are fine. Keep the batter cold by placing the bowl over an ice bath if possible.

Heat the oil
Pour vegetable oil into a deep skillet or pot to a depth of about 1.5–2 inches (enough to shallow-deep fry). Heat the oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small spoonful of batter: it should sizzle and rise immediately without burning.

Batter and fry
Using tongs or a fork, dip each dried oyster into the batter, letting excess drip back into the bowl. Carefully lower oysters into the hot oil in a single layer, leaving space between pieces. Fry 2–3 minutes, turning once with a slotted spoon or spider, until the batter is golden-brown and crisp and oysters are cooked through (internal temperature ~145°F / 63°C or until plump). Work in batches to avoid crowding. Adjust heat as needed to keep oil at 325–350°F (160–175°C).

Drain
Remove fried oysters with a slotted spoon and transfer to a paper-towel-lined baking sheet or wire rack over a sheet tray to drain. Lightly season with a pinch of salt while hot. Keep warm in a low oven (200°F / 95°C) on a rack if frying multiple batches.
Aioli

While the oil heats, make the house aioli. In a small bowl combine mayonnaise, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, smoked paprika, salt, and black pepper. Whisk until smooth. Taste and adjust acidity or salt. If the aioli is too thick, whisk in up to 1 teaspoon of extra-virgin olive oil or a little water to loosen to dipping consistency. Chill until ready to serve.

Serving suggestion: For a half-dozen order serve 6 oysters; for a full dozen double the ingredient quantities and fry in multiple batches, keeping finished oysters warm on a rack in a low oven.
