Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and set aside.

Coat the Cauliflower
In a bowl, toss the cauliflower florets with cornstarch until evenly coated.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until hot.

Fry the Cauliflower
Carefully add the coated cauliflower florets to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.

Make Charred Scallion Cream Cheese
In a pan over medium heat, sauté chopped scallions until charred and tender. In a bowl, mix charred scallions with cream cheese until smooth.

Assemble the Dish
On a serving plate, spread a layer of charred scallion cream cheese. Top with the flash-fried cauliflower, drizzle with sweet and sour sauce, and sprinkle with peanut furikake and micro cilantro.
